Taiwanese Three Cup Chicken

Makes: 4
Ingredients
5 Whole Chicken Wings (Separate in to drumstick, wings and tips)
75ml Sesame Oil
125ml Chinese White Cooking Wine
100ml Oyster Sauce
1tbsp. Sugar
15 thin slices Ginger
4 cloves Garlic
1 bunch Coriander
3pcs Chilli
6 leaves Thailand Basil
Recipe preparation
At the barbecue:
  • Preheat grill to 230°C for 12 minutes with the lid down.
  • Add in Sesame oil, ginger and garlic and cook until aromatic.
  • Add in chicken parts and mix with the ginger and garlic then close the lid and cook for 6 mins.
  • Add in cooking wine, oyster sauce, sugar and close the lid and cook until the sauce thicken.
  • Add in coriander, chili and Thai basil and gently mix all ingredients together.
Hint – check the core temperature of the chicken and see if it reaches 75°C after the sauce thicken, if the chicken is under cooked add in water and let it cook until the chicken are cooked and the sauce is thickening again
