Brian is the soul of the cookery school and while most of the courses are run by him, he has enlisted the help of some great chefs that he has met throughout his career. Artisan producers, professors of food science, purchasing gurus, nutritionists, farmers, gamekeepers, preserve makers, foragers, horticulturists, chocolatiers and patissiers - they all work to enhance your learning experience and inspire you.
