  • Marinade:
  • 3 tablespoons 3 tablespoons fermented soybean paste
  • 3 tablespoons 3 tablespoons soy sauce
  • 3 tablespoons 3 tablespoons Chinese rice wine
  • 3 tablespoons 3 tablespoons hoisin
  • 3 tablespoons 3 tablespoons honey
  • 1 tablespoon 1 tablespoon Chinese five spice
  • 1½ teaspoon 1 ½ teaspoons chilli powder
  • Red food colouring (optional)
  • 1 kilogram 1.7-2kg whole duck
  • 6 6 bao buns, steamed
  • 2 2 Lebanese cucumbers, thinly sliced into ribbons
  • 1 cup 1 cup coriander leaves, roughly chopped
  • 1 cup 1 cup bean shoots
  • 3 3 red chillies, thinly sliced
  • 4 4 spring onions, thinly sliced
  • Sriracha (or other hot chilli sauce), to serve
