Wok-Seared Shrimp with Anchovy Butter

the Ingredients

  • Butter
  • 3 tablespoons unsalted butter, softened
  • 1 tablespoon minced fresh chives
  • 2 anchovies (from a tin), drained, blotted dry, and finely chopped (about 1 teaspoon)
  • ½ teaspoon minced garlic
  • ⅛ teaspoon crushed red pepper flakes
  • Freshly ground black pepper
  • Kosher salt (optional)
  • 1½ pound extra-large shrimp (16/20 count), peeled and deveined, tails left on, patted dry
  • 1 lemon, cut into wedges

Instructions

  • 01 In a small bowl combine the butter ingredients and season with pepper and salt (taste first to make sure you need salt—anchovies can be very salty). Set aside.
  • 02 Prepare the grill for direct cooking over high heat (450° to 550°F) using the Weber Gourmet BBQ System Cooking Grate. Set the Weber Gourmet BBQ System Wok in the grate opening and preheat for about 5 minutes.
  • 03 Bring the anchovy butter and shrimp to the grill and keep close by.
  • 04 When the wok is smoking hot, add 1 tablespoon of the butter, stirring to coat the bottom of the wok. Add the shrimp, separating them as you add them to the wok, and grill over direct high heat, with the lid open, until they just start to brown, about 1 minute. Add the remaining butter, stir until mixed, close the lid, and cook until the shrimp are firm to the touch and just turning opaque in the center, 1 to 2 minutes. Wearing insulated barbecue mitts or gloves and using a large spoon, quickly transfer the shrimp to a serving bowl. Serve immediately with lemon wedges.
