Shepherd’s Salad with Shrimp

the Ingredients

  • Salad
  • 2 tablespoons red wine vinegar
  • 1 garlic clove, minced or pushed through a press
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • ¼ cup extra-virgin olive oil
  • 2¼ cups ½-inch diced, seeded plum tomatoes (about 1 pound)
  • 1¾ cup ½-inch diced, unpeeled Persian or English cucumbers
  • ¾ cup ½-inch diced green bell pepper
  • ½ cup finely chopped red onion
  • ¼ cup finely chopped fresh dill
  • ½ cup coarsely crumbled feta cheese
  • Marinade
  • 1 teaspoon finely grated lemon zest
  • 3 tablespoons fresh lemon juice
  • 3 tablespoons extra-virgin olive oil
  • 1 teaspoon dried oregano leaves
  • 2 garlic cloves, minced or pushed through a press
  • ¾ teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1¼ pound extra-large shrimp (16/20 count), peeled and deveined, tails left on
  • Fresh dill springs
  • Lemon wedges

Instructions

  • 01 In a large bowl whisk the vinegar, garlic, salt, and pepper. Slowly drizzle and whisk in the oil until it is emulsified. Add the tomatoes, cucumbers, bell pepper, onion, and dill. Toss and set aside at room temperature. Gently fold in the feta just before serving.
  • 02 In a medium bowl whisk the marinade ingredients. Add the shrimp, turn to coat, and marinate at room temperature for 10 to 15 minutes, no longer.
  • 03 Prepare the grill for direct cooking over high heat (450° to 550°F) using the Weber Gourmet BBQ System Cooking Grate. Set the Weber Gourmet BBQ System Griddle in the grate opening and preheat for 3 minutes.
  • 04 Remove the shrimp from the bowl and discard the marinade. Cook the shrimp on the griddle over direct high heat, with the lid closed, until firm to the touch and just turning opaque in the center, 2 to 3 minutes, turning once. Remove from the grill and serve the shrimp warm with the salad, garnished with dill sprigs and lemon wedges.
