Crab Cakes with Tartar Sauce

the Ingredients

  • Sauce
  • ½ cup mayonnaise
  • 3 tablespoons sweet pickle relish
  • 1 tablespoon finely chopped shallot
  • 2 teaspoons fresh lemon juice
  • Crab cakes
  • 1 pound lump crabmeat, discard any shell or cartilage
  • 1 cup fine bread crumbs
  • 2 large eggs, lightly beaten
  • ⅓ cup finely chopped red bell pepper
  • ¼ cup plus 1 tablespoon mayonnaise
  • ¼ cup finely chopped fresh Italian parsley leaves
  • 1 tablespoon capers, drained and chopped
  • 1 teaspoon Old Bay® Seasoning
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • 3 to 5 tablespoons canola oil

Instructions

  • 01 Combine the sauce ingredients; cover and refrigerate until 15 minutes before serving.
  • 02 Gently but thoroughly mix the crab cake ingredients, and then form six to eight patties of equal size, each about 3 inches in diameter and ¾ inch thick. Cover and refrigerate for at least 30 minutes or up to 24 hours before grilling.
  • 03 Prepare the grill for direct cooking over medium-low heat (300° to 350°F) using the Weber Gourmet BBQ System Cooking Grate. Set the Weber Gourmet BBQ System Griddle in the grate opening and preheat for 15 minutes.
  • 04 Add 3 tablespoons of the oil to the griddle, wait 30 seconds, and then add half of the crab cakes. Cook, with the lid closed, until browned and heated through, 8 to 10 minutes, turning once. Transfer to a serving plate and cover with foil to keep warm. Add the remaining 2 tablespoons oil to the griddle, if needed, and repeat with the remaining crab cakes. Serve warm with the tartar sauce.
