Spiced Silverside Beef


  • 2 tablespoons coriander seeds
  • 1 tablespoon black peppercorns
  • 1 tablespoon brown sugar
  • 1 tablespoon paprika
  • 1 tablespoon mustard powder
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 2 teaspoons sea salt
  • 1 top round of beef roast (silverside), about 2 pounds

  • 01 Using a mortar and a pestle, combine all the rub ingredients and grind together until finely ground. Spread the rub all over the beef. Alternatively, combine all the rub ingredients in a Weber spice grinder and grind over the beef. Cover and bring to room temperature.
  • 02 Prepare the grill for indirect cooking over medium heat (350° to 450°F).
  • 03 Brush the cooking grates clean. Grill the beef over direct medium heat, with the lid closed, until nicely browned on both sides, about 10 minutes, turning once. Move the beef over indirect medium heat and grill, with the lid closed, until an instant-read thermometer inserted into the thickest part of the beef registers 150°F, about 1 hour.
  • 04 Remove from the grill, and rest at room temperature, indoors, for 10 to 15 minutes before slicing.
