Pepper-Crusted Strip Steaks with Creamy Blue Cheese Onions

the Ingredients

  • Rub
  • 2 tablespoons cracked black pepper
  • 2 teaspoons paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 4 New York strip steaks, each about 8 ounces and 1 inch thick, trimmed of excess fat and patted dry
  • Olive oil
  • 2 medium yellow onions, thinly sliced
  • 2 garlic cloves, minced
  • 1 teaspoon granulated sugar
  • 2 teaspoons finely chopped fresh thyme leaves
  • ¾ cup heavy whipping cream
  • 1 teaspoon Worcestershire sauce
  • ¾ cup crumbled blue cheese (3 ounces)
  • ⅛ teaspoon kosher salt
  • ⅛ teaspoon cracked black pepper

Instructions

  • 01 Combine the rub ingredients. Lightly brush the steaks on both sides with oil and season evenly with the rub. Allow the steaks to stand at room temperature for 15 to 30 minutes before grilling.
  • 02 Prepare the grill for direct cooking over medium-high heat (450° to 500°F) using the Weber Gourmet BBQ System Cooking Grate. Set the Weber Gourmet BBQ System Sear Grate in the grate opening and preheat for 15 minutes.
  • 03 In a large skillet over medium-high heat on the stove, warm 3 tablespoons oil. Add the onions, garlic, sugar, and thyme and cook until lightly browned, 9 to 10 minutes, stirring occasionally. Pour in the cream and Worcestershire sauce and bring to a boil. Reduce the heat to medium and simmer until slightly thickened, about 2 minutes, stirring once or twice. Turn off the burner but leave the skillet in place. Stir in the blue cheese, salt, and pepper. Cover to keep warm.
  • 04 Place the steaks on the sear grate and grill over direct medium-high heat, with the lid closed, until cooked to your desired doneness, 6 to 8 minutes for medium rare, turning once. Remove the steaks from the grill and let rest for 3 to 5 minutes. Serve warm with the creamy blue cheese onions.
