New York Steaks with Bacon and Gorgonzola

the Ingredients

  • 4 New York strip steaks, each about 8 ounces and 1 inch thick, trimmed of excess fat and patted dry
  • 1¼ teaspoon kosher salt
  • ¾ teaspoon freshly ground black pepper
  • 6 slices bacon
  • ¾ cup lightly packed crumbled Gorgonzola cheese (3 ounces)
  • 2 tablespoons finely chopped fresh chives

Instructions

  • 01 Season the steaks evenly with the salt and pepper. Allow the steaks to stand at room temperature for 15 to 30 minutes before grilling.
  • 02 Prepare the grill for direct cooking over medium-high heat (about 400°F) using the Weber Gourmet BBQ System Cooking Grate.
  • 03 Arrange the bacon on the Weber Gourmet BBQ System Griddle, put on insulated barbecue mitts/gloves, and set the griddle in the grate opening. Close the lid, and cook the bacon over direct medium-high heat until crisp, 8 to 10 minutes, turning once or twice. Transfer the bacon to paper towels to drain, and leave the bacon fat in the griddle. Grill the steaks, two at a time, on the griddle over direct medium-high heat, with the lid closed, until cooked to your desired doneness, 8 to 10 minutes for medium rare, turning once.
  • 04 Coarsely chop the bacon. Serve the steaks warm topped with bacon, cheese, and chives.
