Monte Cristo Sandwiches with Smoked Turkey, Cheddar, and Chutney

the Ingredients

  • 2 large eggs
  • ¼ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • 1 cup whole milk
  • 8 slices wide, crusty French bread, each about 5-by-3 inches and ¾ inch thick
  • ¼ cup Major Grey’s chutney
  • 8 ounces thinly sliced smoked turkey
  • 1 small Granny Smith apple, cored and thinly sliced
  • 6 ounces coarsely grated sharp cheddar cheese
  • Vegetable oil

Instructions

  • 01 Prepare the grill for direct cooking over medium heat (350° to 400°F) using the Weber Gourmet BBQ System Cooking Grate. Set the Weber Gourmet BBQ System Griddle in the grate opening and preheat for 5 to 10 minutes.
  • 02 In a large, wide bowl whisk the eggs, salt, and pepper. Gradually whisk in the milk.
  • 03 Spread each bread slice evenly with the chutney, and then top each with turkey, apple slices, and cheese, dividing equally. Top with the remaining four bread slices, pressing down on the sandwiches to adhere slightly. Working with one sandwich at a time, dip each side quickly into the custard, and then transfer to a sheet pan. Repeat with the remaining sandwiches.
  • 04 Brush the griddle generously with oil. Place two sandwiches on the griddle and cook over direct medium heat, with the lid closed, until the cheese is melted and the bread is golden brown and slightly crisp on the outside, 6 to 8 minutes, turning once. Remove from the griddle and tent with aluminum foil to keep warm. Repeat with the remaining sandwiches. Serve warm.
