Pork Chops with Grilled Bell Pepper Zucchini Salad

the Ingredients

  • 4 pork chops, approx. ¾ lb each
  • 2 teaspoons fresh ginger
  • 2 cloves of garlic
  • 5 teaspoons oil
  • ¼ teaspoon curry powder
  • Salt
  • Pepper
  • Grilled bell pepper squash salad:
  • 3 bell peppers (red, yellow, and green)
  • 1 zucchini
  • 1 red onion
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons oil
  • Salt
  • Pepper
  • In addition:
  • 4 ears of corn
  • 4 baking potatoes
  • Oil
  • Salt
  • Pepper

Instructions

  • 01Peel and grate the ginger. Peel and crush the garlic and mix together the garlic, ginger, oil, curry powder, salt, and pepper. Turn the pork chops in the marinade to coat and let them marinate for about 1 hour. Season well with salt and pepper before grilling.
  • 02Rinse the bell peppers and zucchini. Cut the bell peppers in half and remove the seeds. Cut the zucchini in half and then into thick wedges. Remove the husks and silk from the corn. Boil the ears of corn in lightly-salted water for 5 minutes. Rinse the potatoes well and cut into halves. Coat them with oil and season with salt and pepper.
  • 03Prepare the grill for indirect cooking over medium heat (350-450°F). Place the potatoes in the center of the cooking grate and cook over indirect heat for approx. 45 minutes. Then remove them.
  • 04Get the grill ready for direct cooking now over medium heat. Grill the zucchini and bell peppers on one side for about 4 minutes, then remove them and allow to cool slightly. Now place the pork chops onto the hot grate and grill for approx. 12 minutes. Turn them once during that time and cook until they reach a core temperature of 154°F (well done). Grill the corn at direct heat for 3-4 minutes on each side.
  • 05While the meat and vegetables are cooking, peel and finely chop the red onion. Make a vinaigrette by mixing the onion with the vinegar, oil, salt, and pepper. Once the grilled bell peppers and zucchini have cooled, cut the bell peppers into large pieces and toss them with the zucchini and vinaigrette.
    6. Remove the meat and corn from the grill and serve with potatoes and grilled salad.
