Caramelized Apricots with Greek Yogurt and Honey

the Ingredients

  • ½ cup whole milk Greek yogurt
  • 2 tablespoons honey, divided
  • 1 tablespoon unsalted butter
  • 4 firm but ripe apricots, each cut in half
  • 1 teaspoon finely grated lemon zest

Instructions

  • 01 In a small bowl whisk the yogurt and 2 teaspoons of the honey. Set aside.
  • 02 Prepare the grill for direct cooking over medium heat (as close to 350°F as possible) using the Weber Gourmet BBQ System Cooking Grate. Set the Weber Gourmet BBQ System Griddle in the grate opening and preheat for about 10 minutes.
  • 03 In a small saucepan over medium heat on the stove, melt the butter. Add 1 tablespoon of the remaining honey and whisk until combined. Remove from the heat. Brush the apricots on all sides with the honey butter. Place the apricots, cut side down, on the griddle and cook over direct medium heat, with the lid closed, until golden brown and tender, 3 to 5 minutes, rotating the fruit, if necessary, to ensure even cooking, and turning once after 3 or 4 minutes. Transfer the apricot halves, cut side up, to four serving plates, and let rest for 2 to 3 minutes.
  • 04 Spoon the yogurt into the centers of the apricots, dividing it equally. Drizzle with the remaining honey and garnish with the lemon zest. Serve warm.
