Baked Whole Snapper with Thai Green Sauce

the Ingredients

Baked Snapper
  • 1 kilogram whole snapper, cleaned and scaled
  • 2 stems of lemon grass, bruised
  • 2cm piece of ginger, thinly sliced
  • 1 bunch of coriander, washed with roots and stems separated from the leaves
  • 4 kaffir lime leaves, bruised

Thai Green Sauce

  • ½ cup coconut cream
  • 2 tablespoons Thai green curry paste
  • Juice of one lime
  • 1 teaspoon fish sauce
  • ½ teaspoon palm sugar, grated


  • 01 Preheat your barbecue for indirect cooking.
  • 02 Place the snapper on a large piece of aluminum foil.
  • 03 Using a sharp knife cut slits into the flesh of snapper.
  • 04 Push the lemongrass, ginger, coriander stems, and lime leaves into the cavity of the snapper.
  • 05 In a jug combine all of the Thai green sauce ingredients. Massage the sauce into the skin on both sides of the snapper.
  • 06 Lay the snapper on three layers of foil. Fold the sides up around the snapper to create a “boat.”
  • 07 Once the barbecue is preheated, turn the centre burner off and the outside burners to medium.
  • 08 Place the snapper above the center burner and cook for 35 to 45 minutes.
