the Ingredients

Rack Of Lamb With Orange Pomegranate Syrup
  • 2 2 lamb racks, 500 to 750 g (1 to 1½ lb) each


  • 2 tablespoons 2 tablespoons extra-virgin olive oil
  • 1 tablespoon 1 tablespoon very finely chopped garlic
  • 1 tablespoon 1 tablespoon chilli con carne seasoning
  • 2 teaspoons 2 teaspoons sea salt
  • 1 teaspoon 1 teaspoon freshly ground black pepper


  • 125 milliliters 125 ml (4 fl oz/½ cup) fresh orange juice
  • 4 tablespoons 4 tablespoons pomegranate juice
  • 2 tablespoons 2 tablespoons runny honey
  • 1 tablespoon 1 tablespoon balsamic vinegar
  • ½ teaspoon ½ teaspoon sea salt


  • 01 French the lamb racks.
  • 02 Mix the paste ingredients in a small bowl. Spread the paste over the lamb racks and allow them to stand at room temperature for 20 to 30 minutes before barbecuing.
  • 03 Combine the orange juice, pomegranate juice, honey, and balsamic vinegar in a small saucepan. Place over high heat on the stove top and bring to a boil. Once boiling, reduce the heat to medium and simmer for 15 to 20 minutes until the liquid has reduced to about 5 tablespoons. Season the light syrup with the salt and allow to cool. (You can refrigerate the syrup for up to 3 days.)
  • 04 Prepare the barbecue for direct cooking over medium heat (180° to 230°C). Brush the cooking grills clean. Barbecue the lamb, bone sides down first, over direct medium heat, with the lid closed, until cooked to your desired doneness, 15 to 20 minutes for medium rare (52°C), turning once or twice and moving the racks over indirect heat if flare-ups occur. Remove from the barbecue and allow the lamb to rest for 5 minutes before carving into chops (the internal temperature will rise during resting).
  • 05 If necessary, warm the syrup over low heat until it reaches your desired consistency. Serve the lamb warm with the syrup drizzled on top.
