This is our first attempt at an actual "prime" rib. Seasoned with thyme, rosemary, salt, pepper, and garlic cloves embedded in the roast. Cooked to 125 with a chunk of hickory. My bride prepared a horseradish cream sauce, sautéd vegetables, creamy mashed potatoes and a silton blue cheese, red currant mushroom gravy. Made and shared with love.
