  • 3 lb chicken drumettes

Oil and Spices

  • .25 tsp chipotle chile powder
  • .5 tsp granulated garlic
  • .5 tsp granulated onion
  • 1 tsp kosher salt
  • 2 tsp mustard powder
  • 1 tbsp smoked paprika

Condiments

  • 2 tbsp soy sauce
  • 1 tbsp unsulphured (light) molasses

Dairy

  • 1 tbsp unsalted butter

Wine / Beer / Spirits

  • 1 fl oz bourbon

Special Equipment

  • 2 handfuls hickory wood chips

Ingredients

Rub

  • 1 tablespoon smoked paprika
  • 2 teaspoons mustard powder
  • 1 teaspoon kosher salt
  • ½ teaspoon granulated garlic
  • ½ teaspoon granulated onion
  • ¼ teaspoon chipotle chile powder

  • 3 pounds chicken drumettes, about 20

Glaze

  • 2 tablespoons soy sauce
  • 2 tablespoons bourbon
  • 1 tablespoon unsulphured (light) molasses
  • 1 tablespoon unsalted butter

Instructions

  1. Soak the wood chips in water for at least 30 minutes.

  2. In a large bowl mix the rub ingredients. Add the drumettes and toss to coat them evenly.

  3. Prepare the grill for indirect cooking over medium heat (350° to 450°F).

  4. In a small, heavy-bottomed saucepan over high heat, bring the glaze ingredients to a boil and cook just until the butter melts. Transfer to a small bowl and let cool.

  5. Brush the cooking grates clean. Drain and add the wood chips to the charcoal or to the smoker box of a gas grill, following manufacturer’s instructions, and close the lid. When the wood begins to smoke, cook the drumettes over indirect medium heat, with the lid closed as much as possible, until the meat is no longer pink at the bone, 20 to 30 minutes, turning and basting with the glaze once or twice during the last 20 minutes of cooking. Serve warm.

The performer that truly performs.

Upon purchasing our first house, my wife and I bought a new grill. This is the grill I had been wanting for many years and what better time to do so. This thing is awesome and puts out some serious food. Due to the size of this beauty, I tend to only use it when family comes over. None the less, I still love cooking on it, every time. Definitely an awesome Performer.

Old Timer

I love it. Received it for my 71st birthday from my oldest daughter. I already own an 18.5 silver kettle and an 18.5 WSM but really needed a larger kettle. I've had it two days and used it 3 times. What a truly outstanding grill. I love the charcoal baskets. The briquet storage bin is huge and very convenient. The count up/down timer is a great little feature. The thermometer and all the rest make this a grill the best you can get. And of course it cooks like a Weber should...perfectly. Daughters are so sweet!!!
