Serves: 4 // Prep time: 5 minutes | Grilling time: 6 to 8 minutes | Special equipment: spice mill

Grocery List

Meat / Poultry / Seafood

  • 4 New York strip steaks, each about 12 oz and 1" thick

Oil and Spices

  • 2 tbsp black peppercorns
  • .5 tsp kosher salt
  • 2 tbsp vegetable oil

Other

  • 2 tbsp whole coffee beans

Special Equipment

  • spice mill

Ingredients

  • 2 tablespoons whole coffee beans
  • 2 tablespoons whole black peppercorns
  • 4 New York strip steaks, each about 12 ounces and 1 inch thick
  • Vegetable oil
  • Kosher salt

Instructions

  1. Coarsely grind the coffee beans and peppercorns in a spice mill.

  2. Lightly brush the steaks on both sides with oil and season them evenly with the coffee-pepper mixture. Allow the steaks to stand at room temperature for 15 to 30 minutes before grilling.

  3. Prepare the grill for direct cooking over high heat (450° to 550°F).

  4. Brush the cooking grates clean. Grill the steaks over direct high heat, with the lid closed as much as possible, until cooked to your desired doneness, 6 to 8 minutes for medium rare, turning once or twice (if flare-ups occur, move the steaks temporarily over indirect heat). Remove from the grill, season both sides with salt, and let rest for 3 to 5 minutes before serving.
